My husband, after I read this article to him, says that's exactly the reason he eats it and encourages me to bake a fresh loaf of 500 grams every second day. LOL! We love sourdough bread. It's been part of our cultural tradition for centuries. I recall the freshly baked loaves and loaves of my childhood but, it's only recently that I've become aware of its benefits over commercially baked breads.
